Quick and Easy Homemade Tomato Soup

I love tomato soup, but that stuff in a can is sorta depressing. I have had a craving and figured I'd have a go at making my own. If you know me, you know I don't measure unless I'm baking, but today, I had a feeling this would be delicious, and I measured out what I did. Just for you. Well, and for me so I could replicate!


I made the whole meal in under 30 minutes, which is about all the time I have these days!


Anyone else hate having to scroll for days for a recipe? Yep, me too. So let's just cut to the chase!

Quick and Easy Homemade Tomato Soup

What you'll need:

• 3 - 15 oz cans of fire roasted diced tomatoes.

• 3 cloves garlic minced

• 2 tbsp extra virgin olive oil

• 1 cup half and half (Whole milk will work too, but it wont be as creamy)

• 3 tbsp sour cream

• 1/2 cup chicken stock (do not skip this. It adds a lot of flavor!)

• 1/2 tbsp oregano

• Salt to taste


What to do:

• Start by adding your olive oil to your pan over medium heat. Once hot, add your garlic and saute until fragrant.

• Add your tomatoes and oregano, stir to combine. Cook for 5-7 minutes.

• Take an immersion blender (or your regular blender) and blend until smooth.

• Pour in your half and half, sour cream, and chicken stock. Combine and continue to cook for about 15 minutes.

• Taste and add salt if necessary. As I am typing this out, I'm thinking you could also serve with a good Parmesan or Pecorino Romano. Dang I wish I would have thought of that earlier! Guess I'll be making this again soon to try it out!


It really is so quick and easy to throw this together, and your family will be so impressed that you made this from scratch!
